To change the default address bar icon / favicon, navigate to Appearance > Customize and open up the Site Identity section. This is what you should be looking for on your screen:
The Site Icon is used as a browser and app icon for your site. Icons must be square, and at least 512 pixels wide and tall to make sure it would look great on any device.
